Ingredients:

3 lb. tomatoes; peeled and chopped.

3/4 tsp. cinnamon, ground.

1/4 tsp. cloves

1/2 tsp. coriander, ground.

1 tsp. chili powder

1 cup red wine vinegar

1 ¾ cups sugar

1/4 tsp. nutmeg

1/4 tsp. ginger, ground.

1 pinch paprika

1-inch ginger piece, grated

3 garlic cloves; minced.

2 onions; chopped.

1/4 cup raisins
Directions:

Mix tomatoes and grated ginger in your blender, pulse well and transfer to your instant pot.

Add vinegar, sugar, garlic, onions, raisins, cinnamon, cloves, coriander, nutmeg, ground ginger, paprika and chili powder; then stir well. seal the instant pot lid and cook at High for 10 minutes

Quick release the pressure, carefully open the lid; transfer to jars and serve when needed
