Ingredients:

2 cups marrow beans, soaked for 8 hours and drained

1 tbsp. rosemary; chopped.

4 garlic cloves; minced.

1 carrot; chopped

4 cups water

1 bay leaf

2 tbsp. lemon juice

1 cup yellow onion; chopped.

1 tbsp. extra-virgin olive oil

Salt and black pepper to the taste

Already cooked quinoa for serving
Directions:

Set your instant pot on Sauté mode; add oil and heat it up.

Add onion; carrot, garlic and rosemary, stir and cook for 3 minutes

Add water, bay leaf, beans and some salt; then stir well. close the lid and cook at High for 45 minutes.

Release the pressure naturally, open the instant pot lid, discard bay leaf, add salt and pepper to the taste and lemon juice; stir well and divide into bowls over already cooked quinoa
