Ingredients:

1 lb. beef meat, ground.

3 garlic cloves; minced.

1 yellow onion; chopped

15 oz. canned garbanzo beans, rinsed.

1 potato, cubed

1/2 cup frozen peas

14 oz. canned tomatoes, crushed.

1/2 cup white rice

12 oz. spicy V8 juice

2 carrots, thinly sliced

1 tbsp. vegetable oil

1 celery rib; chopped

28 oz. canned beef stock

Salt and black pepper to the taste
Directions:

Set your instant pot on Sauté mode; add beef; then stir well. cook until it browns and transfer to а plate

Add the oil to your pot and heat it up.

Add celery and onion, stir and cook for 5 minutes

Add garlic, stir and cook for 1 minute more.

Add V8 juice, stock, tomatoes, rice, beans, carrots, potatoes, beef, salt and pepper; then stir well. close the lid and cook at High for 5 minutes

Quick release the pressure, remove the instant pot lid and set it on Simmer mode

Add more salt and pepper if needed and peas; then stir well. bring to a simmer, transfer to bowls and serve hot.
